Tomato, aubergine and chickpea bake for 2 or 3 – In this episode I’m going to share with you my recipe for an Aubergine (or Eggplant) Bake. This is great for vegertarians and vegans if you swap out the cheese! I hope you enjoy.
1 large aubergine sliced lengthways
1 tin of spicy tomatoes
1 tin of chickpeas ( drained )
2 tbsp home made bread crumbs &/or parmesan cheese (or vegan alternative to parmesan)
salt and pepper
