Stuffed peppers are so delicious cooked with summer ingredients, tomatoes, garlic, capers and anchovy making a very complimentary flavour— melted cheese on top is your choice. This looks good and goes well with the dark quinoa.
4 red or yellow peppers
8 anchovies
4 tsp capers
2 cloves of garlic
24 cherry tomatoes
2 tbls olive oil
4 oz goat or cheddar cheese
150g dark quinoa
1 stick of chopped celery
4 spring onions
1/2 chopped preserved lemon
1/2 tblsp sour cherrys
1 tbsp olive oil
salt and pepper
