Wild rice salad and Sweet corn sauce

For Thanks Giving this year I have prepared two accompaniments to go with your Turkey or what ever you might be having. These are two of my favourites; Wild Rice and Sweet corn sauce. I hope you enjoy!

3/4 cup of wild rice
1/2 teaspoon of salt 
1/2 cup of hazelnuts
4 tbsp sour cherries
juice of one large orange
1 small fennel bulb chopped
1 apple, skin on, chopped

The juice

grated peel of 1 orange
4 tablespoons of orange juice
4 tsps lemon juice 
1 tsp balsamic vinegar
1/2 tsp salt
3 spring onions – white part only
1/2 tsp fennel seeds
5 tbsp olive oil
1 tbsp hazelnut oil
4 tbsp parsley

Sweet corn sauce

4 cooked corn cobs
50 gms butter
juice of 1 lime
1 med hot chilli——chopped
sea salt and pepper
70 ml sour cream
120 chicken stock
